Rooibos is an herbal tea made from the leaves of the Aspalathus Linearis shrub. It only grows in the Cederberg mountains of South Africa. From seed to harvest is usually about 18 months.
The leaves are cut, bruised, and watered, then are left to dry in low heaps. It is during this drying process that oxidation turns the leaves from green to rust red creating the beautiful and delicate read tea. The flavor is unique with hints of citrus and vanilla.
