Currently, Mitawa AMCOS splits their output between home-processed coffees and lots produced at its washing station, or Centralized Processing Unit (CPU). At Mitawa's CPU, farmers from the surrounding villages deliver cherry in the afternoons and early evenings, with the pulper running late into the night. After the coffee is sorted and graded, it dries on raised beds for 14 to 21 days, as the area is a slightly more humid.
